New York Strip with Roasted Raspberry Chipotle Sauce
Aldrich Farms Roasted Raspberry Chipotle Sauce
1 5lb. New York Roast, Tied
1.5 T sea salt
2-3 fresh garlic coves, peeled
¼ cup four color pepper blend, ground
2 T colavita olive oil
Fresh rosemary
Chopped Pecans
Let the roast stand at room temperature on hour before cooking. Preheat oven to 350. At each string on top and bottom of the roast, cut a 1.5 inch slit halfway through the roast and place a garlic clove in each slit. Place roast in a large pan. Coat roast with oil and sprinkle generously with salt and pepper. Reserve oil, salt and pepper left in pan. In a large skillet, over medium heat, sear roast ends, top and bottom over medium heat 30 seconds per side. Roll roast in reserved oil mixture. Place in roasting pan. Cook, uncovered, until color is a dark brown, then cover with foil until internal temperature has reached 130 F. let roast stand 15 minutes before carving. Cut string and serve roast with room temperature Raspberry chipotle sauce. Garnish with pecans and sprig of rosemary.
Apple Chipotle Glazed Pork Chops

4 boneless center cut pork chops, 3/8”thick
1 T extra virgin olive oil
1 tsp cracked black pepper
1 tsp. sea salt
Season pork chops with salt and pepper to taste. Brown 1 side 4 minutes, turn and cook second side 4 minutes or unitl completely cooked. Pour a generous portion of Aldrich Farms Apple Chipotle Sauce on each place. Remove chops from pan and place on plate over sauce, pour remaining juices over chops.

Grilled Salmon with Apple Garlic Pepper Glaze

Salmon Fillet
Directions
Place salmon fillet on grill and begin cooking. Microwave, or heat the jar of jelly under hot water, until the jelly is liquid and pourable. Spread it over the top of the cooked salmon fillet 2 minutes before taking it off the grill using either a pastry brush or a spoon. Take care that the jelly does not burn. Remove salmon and serve immediately. Fully cooked salmon will have a beautiful finish with the added flavor of black pepper and garlic.
Raspberry Chipotle Glazed Roast Turkey
Ingredients
10 Lb Turkey, thawed
Aldrich Farms Raspberry Chipotle Sauce
2 tbsp. Softened Butter
Salt and Pepper
Directions
Preheat oven to 350. Remove giblets and neck (reserve for gravy). Rinse thawed turkey and pat dry. Place turkey in roasting pan and rub down with softened butter, season with salt and pepper, brush with half bottle of Raspberry Chipotle Sauce. Arrange turkey in roasting pan, breast side up and place in oven. Cook 10 minutes per pound. Baste occasionally with remaining sauce. Let stand 15 minutes before carving.
